Jing Ren, founder of Focaccia Club, makes no secret of the fact. He wants to position his restaurant chain as the leader in focaccia in France.
To achieve this ambitious goal, this ambitious entrepreneur draws on his retail experience to replicate a proven model.
His strategy is simple: develop a vast network of restaurants quickly, in a segment where there's plenty of room for growth.
With 9 outlets already in Paris, Jing doesn't waste a second. However, his project has been carefully thought through, and nothing has been left to chance.
"I chose premium locations, to capitalize on very good visibility, small surface areas and above all a quality product that appeals to everyone."
When it comes to branding, Focaccia Club doesn't do things by halves either. Its restaurants are so eye-catching that it's impossible to miss them in the Parisian landscape. Clashing white and pink storefronts, dark green floors. No doubt about it, this is Focaccia Club!

That said, Jing, like thousands of restaurant entrepreneurs, faces many constraints in developing his network:
- the current economic climate makes the future uncertain,
- it has to cope with limited space so as not to undermine its profitability,
- recruitment in the dining room and kitchen is time-consuming and complex, especially as he relies on a dynamic, smiling team to welcome his customers.
In fact, he makes it a point of honor to do so.
"This is the priority of our model: customers must be well served. In foodservice, 90% of business is done on the ground."
To ensure Focaccia Club's growth and achieve its objective, he is also convinced that mastery of its image, as well as mastery of the technical side, are essential.
"Once a first restaurant is open, once the concept is tried and tested, duplicating our model is inevitably easier and therefore faster."
